Hey there! I haven’t been posting as regularly as I’d like, so I thought I’d switch to more informal posts so that I’m more likely to write more often. After all, the whole point of having a blog that’s all mine is getting to skip those long reference pieces in favor of *whatever I feel like*. So… here’s what Paleo AIP looked like for me today in April!
Bone broth! (I just made a batch and it totally gelled. I am over the moon about that). I put my usual sausage and vegetables breakfast into a bowl of bone broth. I added a dash of coconut aminos, and maybe some fresh cilantro (I did that either yesterday or today…)
While working at the library, I ate a banana, an epic bar, and a thermos of homemade coconut milk in decaf earl grey tea from a local tea shop.
When I got home from the library, I was starving! I scarfed down lettuce wraps with a filling of chicken, mushroom, and onion. This mixture was cooked with avocado oil, but also some butter, which I don’t think I’ll be keeping in rotation because I’ve felt pretty “off” the last few weeks and I think I can trace it to some goat dairy and cow butter.
As a sweet snack, I ate an apple with a dip I made out of coconut butter, honey, vanilla, and spices — basically tasted like cake.
I am as we speak frying up some bacon and sweet plantains for dinner. I also had a half a personal watermelon.
There we go! This is a pretty standard day. I’d like to think I eat more vegetables at lunch, usually, but maybe that’s something I need to review. I have also been eating more (natural) sugars lately, and I know I need to tone that down. Any questions?
