You know what I miss?
In one of my college’s many decent-but-not-crazy dining halls, they had a crazy seasonal drink called a caramel apple cider.
After you paid at the counter, you waddled over to the drink carafes with a fresh paper cup and ladled this sugary, caramel-smelling liquid out of a soup container. Then you stuck a spoon in a small carafe of thinly sliced almonds and walked to a late afternoon English class without a care in the world.
It was divine… and I don’t want to think about how much HFCS and “butter flavor” was on the ingredients list.
Luckily, I had a whimsical moment and tried to think of something “buttery” to put in my apple juice after I’d microwaved it.
And then this amazingness happened, and it tastes like the real deal!
Hot “Buttered” Apple Cider”
2 C Apple Juice (Share with a friend or an adorable husband)
1/8 tsp Cinnamon
1.5 TB (Or big spoon of) coconut oil
Deceptively simple, but a nice sugary drink when you’re feeling like all the Starbucks ads are speaking to you directly. I say AIP “friendly” because if you’re following the protocol, it’s best to not drink a bunch of fruit juice at once. However, drinking this with some good fat like coconut oil lessens the hormonal blow.
