Are you running a Paleo household with a partner or kids who can’t stand eating nuts? Or even a partner or kids who can’t seem to eat enough.
Well, I am. JHubbs is all about food texture, and when it comes to nuts (almonds, cashews, Brazil nuts, etc) he can’t deal with too much. Hard, crunchy, take forever to chew… his complaints go on, even for almond butter! (Which kills me, because I miss it so much).
Enter, what feels like a Christmas miracle! I threw together an attempt at fingerprint cookies and came up with a chewy, cookie-like bite that is basically the same as eating nuts. It’s a little dry, a little less sweet, and perfect for an after-school snack (with or without the jam).

Paleo Nuts-For-Nut-Haters Cookies Ingredients
1TB Coconut Oil (Learn from me & melt it first!)
2TB Almond Butter
1TSP Lemon Juice
2TB Brown Sugar
3/4 C Cashew meal
3/4 C Coconut Flour
Bake at 350 for 5-10 minutes (Watch it! These cook quickly and will look kind of dry when they’re done.).
You can make these as thumbprint cookies and top with pumpkin butter or jam. Or, roll into breadsticks and bake as dip-able sticks or as-is biscotti.
